Farmhouse Table Beer Truly an expression of our time and place. Brewed with New York grown barley, wheat and hopped with Arrowood grown Cascade. Beginning its fermentation journey in stainless with a Belgian yeast, we then transfer to French oak chardonnay barrels where we pitch a wildly-cultivated yeast from our farm. Practicing patience, the beer is then allowed to age. Naturally conditioned through re-fermentation in the bottle.
Sundown (Hoppy Wheat Ale): This classic German Weizenbock has notes of apricots, raisins cloves and citrus. These characteristics are brought out by our locally grown wheat and oats which come together with a traditional German yeast strain to create this smooth yet complex brew.
Weekend IPAThe Weekend India Pale Ale is crafted in the New England style. Built on a foundation of Hudson Valley grown wheat and oats this hop forward brew showcases Citra, Mosaic and Amarillo hops. Hops are continually added into the fermenter as the beer ages to create a double hopped IPA that is as fresh as can be. Notes of tropical fruit and pine.
Sahti (Finnish Farmhouse Ale): Inspired by one of the oldest farmhouse ale styles in the world, our Sahti is brewed with farm-foraged juniper branches and New York amber rye and pilsner malt, Munich and malted oats is our mash tun. Our Sahti is then boiled with a light amount of noble Saaz to accentuate the juniper bitterness and aroma. We pitch a farm-raised sourdough starter to ferment the Sahti, which lends a dried apricot on the nose and a subtle lactic tartness.
Pig Stout (Export Stout): The Stout Pig is flavorful and strong. With a rich mouthfeel and creamy head this export stout is a beer you can sink your teeth into. Showcasing notes of dark chocolate and caramel plus slightly hopped to balance.
